The Thanksgiving Centerpiece: Height, Candles and Making It Last the Weekend

The Thanksgiving centerpiece has to do something no other arrangement in the year is asked to do: hold the middle of a crowded table for three hours, share that space with more serving dishes than any other meal, survive candles, and then still look correct on Saturday when the relatives are still in the house.
Most centerpieces fail on the first requirement and never get to the rest.
The Height Rule
A seated adult's eyeline across a dining table sits roughly forty-four to forty-eight inches from the floor. The table is about twenty-nine. That gives you about fifteen inches before the arrangement is physically between two people trying to talk to each other.
Build under fourteen inches. This is the single most violated rule in holiday floristry, and the failure is always the same: the arrangement looks magnificent on an empty table, and within ten minutes of everyone sitting down somebody quietly moves it to the sideboard.
Fifteen inches between the tabletop and the eyeline of the person opposite. Everything else about a centerpiece is downstream of that number.
Spend the budget on width and density instead of height. A low, wide, tightly built arrangement with real depth of material commands the table without entering anyone's sightline.
Long Tables Want Several Pieces
For a table seating ten or more, one central arrangement creates a dead zone. The people at the ends are looking at the back of something designed for the middle.
Two or three smaller pieces spaced along the axis solve this at no extra cost. Each seat gets a considered view, the repetition reads as deliberate, and — critically — they can be moved apart when the turkey and four side dishes arrive. A single large centerpiece cannot survive that moment; it gets relocated, and the table loses its centre for the rest of the meal.
Candles and Flowers
Thanksgiving tables usually have both, and the combination needs a little care.
- Keep flame clear of foliage — dried and preserved elements are beautiful and genuinely flammable
- Taper candles want height separation — the flame should sit well above the arrangement, not level with it
- Votives and tealights work better with a low centerpiece; they sit below the sightline too
- Unscented, always — scented candles fight the food as badly as fragrant flowers do
- Nothing overhanging a flame, including trailing eucalyptus, which is oil-rich and burns readily
Florist's tip: If you want dried grasses, bleached ruscus or preserved foliage in the arrangement — and they are excellent for autumn texture — keep candles in hurricane glass rather than open. Preserved material is treated with glycerine and it does not smoulder politely.
Making It Last Past Thursday
Thanksgiving is rarely a single day. Guests stay, there is a second meal on Friday, and the table stays dressed into the weekend. An arrangement built purely from fresh soft-stemmed flowers will look tired by Saturday.
The fix is to build a proportion of the arrangement from material that does not decline:
Dried and preserved — bleached ruscus, preserved eucalyptus, dried grasses, seed heads, ornamental wheat. These carry autumn texture, cost less than the equivalent volume of fresh stems, and look identical on day six.
Long-holding fresh — chrysanthemum in its better cultivars, lisianthus, spray roses, hydrangea if it goes in genuinely saturated. These will still be respectable on Sunday.
Short-lived fresh — fully open garden roses, anemone, sweet pea. Beautiful on Thursday, spent by Saturday. Use them as the accent, not the structure.
A roughly half-and-half build of preserved structure and long-holding fresh gives you an arrangement that peaks on Thursday and is still correct on Sunday, which is what the weekend actually requires.
Ordered or Built Yourself
If you are building it, the mistakes to avoid are all scale mistakes — too tall, too wide for the serving dishes, too precious to move. Buy loose material, cut everything shorter than feels right, and build in a low vessel with real water volume.
If you are ordering, specify the table length, the seat count, and that it needs to hold through Sunday. Those three facts change the build more than any palette instruction. Designer Art and Georgetown Blush & Ivory both adapt well to a low autumn build.

Common Questions
How tall should a Thanksgiving centerpiece be?
Under about fourteen inches. A seated eyeline across a dining table leaves roughly fifteen inches of clearance, and anything taller sits between guests trying to talk across the table.
Should a long table have one centerpiece or several?
Several. For ten or more seats, two or three lower pieces spaced along the table give every seat a considered view and can be moved apart when serving dishes arrive, which a single large arrangement cannot survive.
Are dried flowers safe near candles?
Not especially. Dried grasses, preserved foliage and eucalyptus are oil-rich or glycerine-treated and burn readily. Use hurricane glass rather than open flame if the arrangement contains preserved material.
How do I make a Thanksgiving arrangement last the whole weekend?
Build roughly half from dried or preserved material — bleached ruscus, dried grasses, seed heads — and half from long-holding fresh flowers such as chrysanthemum, lisianthus and spray roses. Keep short-lived blooms as accents rather than structure.
Tell us the table length, the seat count, and whether it needs to hold through Sunday. We will build to the sightline.

Where Your Flowers Actually Come From
A dozen roses bought in Washington on a Tuesday in November were, with high probability, cut in the Andes the previous Thursday, trucked to Quito or Bogotá, flown overnight to Miami, cleared through customs and agricultural inspection, trucked up the eastern seaboard, and sold to a florist on Monday
