Almost every flower care instruction says cold water, and it is right most of the time and wrong in several specific and useful cases. The exceptions are worth knowing because they solve problems that nothing else fixes.
Three reasons, and they compound.
Bacteria multiply faster in warm water, and bacterial blockage of the stem is the main cause of early failure. Cool water slows the whole process.
Cool water also slows the flower's own metabolism, extending its life in the same way a florist's cooler does — the entire principle behind cold storage is that cold flowers age slowly.
And cool water holds more dissolved oxygen, which the stem tissue uses.
Cool rather than iced. Water straight from the cold tap is right; water with ice in it is unnecessary and can shock tender material.
Two situations, and both are common enough to matter.
Flowers bought in tight bud that need to open for a specific date. Warm water — around 38 to 43°C, comfortably warm to the hand rather than hot — is taken up faster and accelerates opening. A bunch of tight roses put into warm water will open noticeably sooner than the same bunch in cold.
This is a standard florist technique for bringing material on to a deadline. It shortens overall vase life, which is an acceptable trade when the flowers are needed at their peak on a known day.
Woody stems. Lilac, blossom, hydrangea and other woody material draw slowly, and warm water moves through the tissue more readily. For woody stems that seem reluctant to take up water, warm is a genuine improvement rather than a compromise.
Not for standing in — for a brief treatment.
The boiling water method: re-cut the stem, then stand the bottom two centimetres in just-boiled water for about thirty seconds, keeping the flower head well clear of the steam, then transfer straight into cool water.
It clears whatever is blocking the base — an air lock, sap, bacterial film — and reopens the channel. It is the standard rescue for a wilted hydrangea that has not responded to anything else, and it works on other woody material.
The stem end will be visibly damaged afterward and should be trimmed off before final placement. And steam damage to petals is not recoverable, which is the usual way this goes wrong.
A few flowers actively prefer genuinely cold water and are shortened by anything warmer.
Bulb flowers as a group: tulips, hyacinth, muscari, and narcissus above all. These are cool-season crops and they treat warmth as a signal to finish. Cold water, shallow, changed often, and no flower food — standard preservative can shorten narcissus rather than helping it.
Anemone and ranunculus, both cool-season, behave similarly. They open flat and go over fast above about 20°C regardless of what is in the vase.
Frequently overlooked and often more important.
Hollow and soft-stemmed flowers rot when deeply submerged — ranunculus, anemone, tulips, narcissus, muscari all want two to three inches and no more. A tall vase filled to the top will soften the stems from the bottom up.
Woody-stemmed material wants the opposite: hydrangea, lilac and blossom draw poorly and need a substantial column of water to work with, so deep is right.
This is a real complication in a mixed arrangement, and it is one of the reasons a bunch containing both tulips and hydrangea rarely satisfies either.
Two household variables worth knowing about.
Hard water is alkaline, which works against the acidifier in flower food and slows uptake slightly. Not worth treating, but it means the sachet is doing more work in a hard-water area.
Artificially softened water is the genuine problem. Ion-exchange softeners replace calcium with sodium, and the resulting sodium levels are not good for cut flowers. In a house with a softener, use an unsoftened tap — usually the kitchen cold tap — for anything you care about.
Rainwater is naturally slightly acidic and works well, which is why it appears in older flower-care advice.
Cool water for everything by default, changed completely every two or three days. Warm water to bring tight material on for a deadline, or to help woody stems draw. A brief hot treatment to rescue a stem that has stopped drinking. Genuinely cold and shallow for bulb flowers.
And where an arrangement combines material with incompatible requirements — which most mixed bunches do — the compromise is cool water at moderate depth, which suits nothing perfectly and nothing badly.
