The logic is simple: warm water solves a hydration problem, cool water solves a longevity problem. Warm water is medicine; cool water is maintenance. Confusing the two is why perfectly good flowers die early in perfectly nice apartments.
Flower biology is not uniform, and a few varieties break the rule hard enough to matter. Bulb flowers — tulips, hyacinths, daffodils, muscari — should always go into cold water. Their stems are still actively elongating after cutting, and warmth signals them to grow and open faster than you want. A tulip in warm water will splay open and arch dramatically within a day. In cold water it holds its cupped form and continues its slow, elegant lean toward the light for well over a week. Orchids are the other significant exception, and they're a different animal entirely. Hydrangeas in particular respond to a full re-hydration cycle: recut, sixty seconds in water just short of boiling to clear the sap plug, then straight into the warm conditioning bath. A drooping hydrangea head is almost always recoverable this way, which is worth knowing in July when DC humidity gives way to sudden air-conditioned dryness indoors.
Ambient conditions shift the equation. From November through March, most rowhouses in Logan Circle and Shaw run forced-air heat that drops indoor humidity into the twenties — brutally dry for petals.
