Two features combine badly. A hydrangea head presents an enormous surface area — hundreds of sepals, each losing water continuously — and the stem is woody, which draws slowly and seals readily once cut.
So the plant is losing water faster than it can replace it almost from the moment it is cut, and any interruption to uptake produces a rapid collapse. A hydrangea can go from perfect to fully wilted in a couple of hours, which is what makes it feel like a failure of the flower rather than a plumbing problem.
The good news follows from the same anatomy. Because the sepals are broad and thin, they can absorb water directly through their surface, which is what makes the rescue possible.
This is the one that works, and it is worth doing properly.
Fill a sink or a basin with cool water. Re-cut the stem at a sharp angle with secateurs, taking two to three centimetres, and cut it under water if you can. Then lay the entire flower — head and all — into the basin so the whole head is submerged, and leave it for one to two hours. Some stems need longer; four hours does no harm.
Take it out, shake off the excess gently, and put it into a clean vase with fresh water. A stem that was fully collapsed will frequently be standing up again within the hour.
It looks like the wrong thing to do to a flower and it is standard practice in every florist's workroom.
The second method, used alongside submersion or on its own for a stem that keeps failing.
Dip the freshly cut stem end into powdered alum — the pickling spice, sold in the baking aisle — before placing it in water. Alum is astringent and appears to keep the cut surface open, improving uptake in a stem that is otherwise sealing.
A small amount on the cut end is enough. This is a genuinely old florist's technique and it works more often than it has any obvious right to.
More aggressive, and the option for a stem that has resisted everything else.
Re-cut the stem, then stand the bottom two centimetres in just-boiled water for about thirty seconds, keeping the head well away from the steam. Then transfer straight into cool water.
The heat clears whatever is blocking the base — air, sap, bacterial film — and reopens the channel. It sacrifices a small length of stem, which will be visibly damaged and should be trimmed off before the final placement.
Keep the flower head out of the steam. Steam damage to the sepals is not recoverable and it is the usual way this method goes wrong.
Three signs that the stem is finished rather than thirsty.
The sepals feel papery and dry rather than limp and soft. Limp is dehydration; papery is the end of the flower's life, and at that point it is drying rather than wilting — which for an autumn-cut head is a legitimate outcome rather than a failure.
The stem is soft or slimy at the base, indicating rot rather than blockage. Cutting well above the soft section sometimes helps; frequently it does not.
Or the head has browned at the edges. Browning is irreversible, and no amount of water reverses it.
The florist's hydrangea is Hydrangea macrophylla, the mophead and lacecap forms, and everything above is written for it.
Paniculata types — the conical white heads that turn pink as they age — behave somewhat better as cut flowers, with firmer sepals and less dramatic collapse. Arborescens, the very large white domes, are the most prone to wilting of the lot and the hardest to revive.
The other variable is when it was cut. A head cut early in the season, while the sepals are still soft and fleshy, wilts readily and revives readily. A head cut late, after it has begun to lignify on the plant, barely wilts at all — and if it does dry, it dries rather than dying, which is a different and entirely acceptable outcome.
Hydrangeas want deep water, unlike most of the flowers that share a vase with them — the woody stem needs a substantial column to draw from, so a shallow arrangement is working against them.
Keep them out of sun and away from heat, since the surface area that makes them vulnerable also makes them lose water fast in warmth. Re-cut every couple of days. And strip the lower foliage aggressively, because hydrangea leaves are large and hold a great deal of water, competing directly with the head — on a stem that keeps failing, removing half the remaining foliage often fixes it outright.
Autumn-cut antique heads, which have lignified on the plant, avoid this whole problem: they hold their form as they dry rather than collapsing, which is why our Preserved Flower Dome and the dried end of the range use them.
